Use Your Birthday Banana Bread as an Excuse to Eat Cake for Breakfast

My birthday is coming soon. Just so you know, in case you want to buy me a present. Just kidding J For my kids and my husband’s birthdays I always make great decadent cakes. That’s the way they like their cakes and I have no objection. But when it comes to my birthday I like to keep things simple and light. Not only because calories from birthday cakes DO count, but also because I am that kind of a person, I like simple things.

Birthday Banana Bread Cake

Last year I made my birthday cake from pancakes. I loved how cute it looked with the candle on top (yes, I put only one candle). This year banana bread is on the menu. The idea came from my favorite recipe site’s banana bread collection The point is to pick the best recipe for soft and moist banana bread and add ingredients that will turn it into a real birthday cake. Ready?

Funfetti Banana Bread

Nothing says “Happy Birthday” better than sprinkles. There are two ways to make this recipe. The first one is to make it with a box Funfetti cake mix together with eggs and mashed bananas. The second way is to prepare your usual banana bread batter and add colorful sprinkles inside. I also added ½ cup of buttermilk in the recipe for extra moisture. Then I made a glaze using heavy cream, butter, sugar and vanilla extract and, of course, covered richly with sprinkles.

Death-by-Chocolate Banana Bread


Chocolate is the simplest way to transform simple things into real delights. I like my banana bread packed with chocolate. The batter is made with cocoa powder and chocolate chips. The cake is covered with chocolate glaze made of melted chocolate together with heavy cream. This year I will try the white chocolate variation made with white chocolate chips inside the batter and white chocolate glaze. Can’t wait!

Caramelized Banana Bread

The full title of this recipe is Caramelized Banana Bread with Dulce de Leche Glaze. Caramelize the bananas by adding them into a few tablespoons of melted butter in a hot pan, add brown sugar and cook for about 10 minutes. Puree them with an electric mixer and add to the batter. Dulce le leche is made from sweetened condensed milk. Place the milk into a glass pie dish and cover with foil. Place the dish in a larger dish filled with hot water and bake at 425 degrees for one hour. Drizzle hot over the cooled banana loaf.

Nutella Swirled Peanut Butter Banana Bread


Warning! This banana bread is dangerously delicious! it is made with ½ cup creamy peanut butter, ¾ cup chopped Peanut Butter Cups, 1/3 cup chocolate chips and 3 tablespoons Nutella. Oh baby. Is there anyone who can resist this sweet treat? Anyone?

Cream Cheese Stuffed Chocolate Chip Banana Bread Coffee Cake


Just when I thought that things couldn’t get any better, this recipe proved me wrong. Check this out: the batter includes coffee, chocolate chips and walnuts; then there is cinnamon walnut streusel, then a cream cheese filling and at the end vanilla-based glaze. What else can I say? I rest my case.

Strawberry Banana Bread


In order to be e good girl I ought to include my favorite really light version of banana bread, the one with strawberries. It calls for 1 ½ cup of chopped strawberries. However, have you seen a strawberry banana bread covered in strawberry pink glaze? Prepare it with strawberry extract and heavy whipping cream. Add some red food coloring if you want more intense pink color. You can also try this beauty with maraschino cherries.
